Have I gone cupcake crazy?!?!?
This week, I’ve decided to take on a fun side project. We’re having a foodfest at work for a pregnant coworker and I’ve volunteered to bring something. So in my brainstorming process, this idea hit me like a bolt of lightning.
I’m a Cupcake Wars addict. I’ve seen just about every episode. However, I fast forward through the making and drama of the cupcakes and focus on all of the creative flavors of the bakers. Recently, on one episode (I think it was the “Funny or Die” episode), a baker made a corndog cupcake with a hot dog baked inside. This is genius! And as a fellow preggo, I can safely say that corndogs are one of the ultimate preggo foods. So in honor of my pregnant coworker’s foodfest, I made a chili cheese dog cupcake. I baked the hotdog inside of a delicious cornbread cupcake, top it with some homemade chili (for “frosting”) and sprinkle it with sharp cheddar cheese.
And bonus – this cupcake is super easy to make! I just used my favorite cornbread mix (Krusteaz Natural Honey Cornbread), shoved a hot dog in the middle of it and baked it at 400 for 14-16 minutes.
I’ve made cornbread a lot in the past. But, I guess I don’t remember it rising so perfectly. It rose beautifully around the hot dog and looks so playful.
For the grand finale, I topped it with homemade chili and some shredded cheese. All that’s missing is the mustard! I can’t wait for my coworker to try it!
